Beef Cannelloni


CANNELLONI

An Italian dish that consists of pasta tubes (cannelloni) stuffed with bolognese sauce, sitting in tomato sauce and topped with cheese/cheese sauce!





Ingredients:

Ø Dried Cannelloni tubes
Ø 140g cheddar cheese, grated (topping)
Ø Parmesan cheese 
Ø Mozzarella cheese (grated)

Bolognese Sauce-

Ø 400g Mince beef
Ø 1 tbsp Olive oil
Ø 1 large onion, finely chopped
Ø 4 garlic cloves, crushed
Ø ½ tsp dried oregano and rosemary
Ø 400g tinned tomatoes
Ø 50g tomato puree 
Ø Salt and pepper
Ø Garlic

Tomato Sauce-

Ø 1 large onion, finely chopped
Ø 2 garlic cloves, crushed
Ø A little butter and oil
Ø 400g tinned tomatoes
Ø ½  tsp dried oregano and rosemary
Ø Salt and black pepper
Ø A little sugar 


Equipment:

Ø Non-stick pan
Ø Small pan
Ø Wooden spoon
Ø Spoon
Ø Knife
Ø Baking dish or foil container 




METHOD

Bolognese Sauce –

1. Heat the oil in a non-stick pan and sautee the garlic. (1 minute)
2. Add the onions and sautee until transparent or soft (2 mins)
3. After the onions have softened, add the oregano and the rosemary, and then stir. (1 min)
4. Add the mince and break apart with the wooden spoon. Cook until brown. (5 mins)
5. Add the tin tomato and stir. Then, add the tomato puree and seasoning. Stir then add lid to simmer. (Simmer for 20-30 minutes until meat is cooked)
6. Once cooked, take the Bolognese off the heat and let it cool down. 

Tomato Sauce- this will go on top and around the cannelloni tubes.

1. Heat the pan and add the butter. Also add a little oil to prevent the butter from burning. Then, add the garlic, sautee for a little while, and then add the onions. You can also add the salt at this point to know how much you’re putting in. 
2. Let the onion soften a little then add the oregano and rosemary. Cook until the onions are soft and transparent. (3 mins)
3. Pour in the tinned tomato and stir. Add the black pepper and stir again. (3 mins)
4. Add a little sugar to bring out more flavor and stir. Keep stirring for around 3-4 minutes. 
5. Take off the heat and transfer to a glass bowl. Use a hand blender to turn it into a puree. Add a bit of boiling water to make it a little runnier. (3 mins)
6. Leave to cool.

1. Heat oven to 200C/Gas mark 6
2. When the Bolognese sauce is cold, take the cannelloni tubes and stuff them with the Bolognese sauce. Fill it up and don’t leave any space inside. 
3. Pour some of the tomato sauce at base of the baking dish then lay the cannelloni tubes on top. After, pour the rest of the tomato sauce on top of the tubes and top of with lots of cheese! (Three cheeses- mozzarella, parmesan and cheddar.)
4. Cook for 30-40 minutes and then take out and test with a sharp pointed knife. If the knife falls through easily and effortless, it is ready. If the knife takes a little more effort to fall through, put back in the oven for 10 more minutes and repeat the process of checking. (30+ mins)
